Italian Minestrone
The perfect comfort food for winter: Italian minestrone or veggie soup with pasta!

- 2 zucchini
- 2 carrots
- 3 cm celery
- 1 red pepper
- 1 yellow pepper
- 1 potato
- olive oil
- 1 can tomatoes 400 ml
- 2 cans water
- 200 ml white wine
- 1 bay leaf
- salz
- pepper
- 200 g pasta small, for soups
- parmesan cheese for serving
Peel and chop the veggies into small bite-sized pieces. Fry in olive oil and add tomatoes, water and white wine. Add bay leaf, salt and pepper and let the soup simmer for approx. 30 minutes.
Add the pasta and cook for as long as written on the box (approx. 10 minutes depending on type of pasta). Season the soup and serve with freshly grated parmesan and olive oil.
