Green Tagliatelle

Green pasta is a real eyecatcher on the plate - make these easy green tagliatelle and surprise your guests!

Utensilien

  • Blender
  • Sieve
  • Bowl
  • Rolling pin or pasta machine
  • Chopping board + knife or tagliatelle-maker on the pasta machine
  • Pot

Zutaten
  

  • 1 handful spinach or Swiss chard
  • 50 ml water
  • 400 g durum wheat semolina
  • 2 eggs
  • 1 egg yolk
  • 1 tsp salt
  • flour for rolling out the dough

Zubereitung
 

  • Blend spinach or Swiss chard with water until smooth. Pour through a sieve into a bowl.
  • Add the rest of the ingredients to the bowl and knead until you've got a smooth pasta dough. Add some more semolina/water depending on the consistency of your dough. Let it rest for approx. 10 minutes in the fridge.
  • Roll it out very thinly with a rolling pin or use a pasta machine. Dust with flour, roll the pieces of thinly rolled out dough up and cut into approx. 1 cm stripes. Hang them on a clean drying rack to try for 1 hour or directly cook them.
  • Boil the tagliatelle in salted water for 2-3 minutes and serve with a sauce of your choice.

Tipps

You can also use herbs to make the dough green, but spinach or Swiss chard give it a brighter color which lasts better when cooking.
