Vegan Curry with Quinoa and Veggies

Easy, delicious, creamy curry with lots of veggies and quinoa. So healthy and fun to make!

Zutaten
  

For the curry:

  • 1 onion
  • 1 garlic clove
  • 2 red or yellow peppers
  • 2 zucchini
  • 2 carrots
  • 1 handful green beans
  • 1 tbsp coconut oil
  • 2 cans coconut milk approx. 400 ml each
  • 1 piece lemongrass or zest + juice of 1/2 lime
  • 1 cm ginger
  • 2 tsp curcuma
  • 1/2 chili depending on how spicy you want it
  • 1/2 tsp salt
  • 3 tbsp soy sauce

For the quinoa:

  • 200 g quinoa
  • 600 ml water
  • 1/2 tsp salt

Zubereitung
 

  • Wash the quinoa in a sieve for approx. 2 minutes (otherwise it will taste bitter). Put it in a pot with water and salt and cook for approx. 25 minutes at medium heat.
  • In the meantime, chop onion and garlic. Cut peppers, zucchini, (peeled) carrot and green beans into pieces. Fry onion and garlic in a pan with coconut oil, add the veggies and keep frying for 1-2 minutes.
  • Add the coconut milk and approx. the same amount of water. Slice the lemongrass, grate the ginger and add both to the curry. Add curcuma, chili, salt and soy sauce as well and let it simmer for 10 minutes.
  • Serve the curry with quinoa and if you want you can top it with fresh herbs like coriander or parsley.
