The Perfect Poke Bowl

Hawaiian poke bowl with salmon – the perfect Summer dish!

Zutaten
  

  • 1 cup basmati rice
  • 1 carrot grated/finely chopped
  • 1 avocado
  • 1 mango
  • 200 g cherry tomatoes
  • 20 slices salmon sashimi or 100 g fresh salmon
  • 100 g lettuce/field salad
  • 50 g edamame
  • 4 tsp nuts & seeds sesame, sunflower seeds...
  • 4 tbsp soy sauce
  • 4 tbsp roasted sesame oil

Zubereitung
 

  • Cook the basmati rice as written on the package (usually it's 1 cup rice, 2 cups water, let it simmer for 10 minutes with a little salt). Let it cool down.
  • Grate or finely chop the carrot, peel the avocado and the mango and dice them. Cut the tomatoes in half, slice the salmon into thin sashimi (or buy the fresh sashimi at a sushi place). Cook & peel the edamame if necessary.
  • Arrange all of the ingredients in a bowl: I started with rice, then lettuce, carrot, avocado, tomatoes, salmon, edamame, mango, nuts & seeds.
  • Season the poke bowl with soy sauce (mainly on the rice & fish) and some sesame oil. Enjoy!
