Homemade Vanilla Ice Cream

The best homemade vanilla ice cream ever. No ice cream maker or machine needed & it's even sugarfree (coconut sugar only)! Try & print this easy recipe for later.

Zutaten
  

  • 3 egg yolks
  • 70 g coconut sugar or normal sugar
  • salt
  • 300 ml cream
  • 100 ml milk or plant-based milk (oat milk...)
  • 1 vanilla pod

Zubereitung
 

  • Whisk egg yolks, sugar and a pinch of salt over a water bath – warm up to maximum 70 °C and keep whisking for about 5-10 minutes until the mixture is creamy and light. You can use a kitchen machine for this (if you set the exact temperature it's easier).
  • Split the vanilla pod, scrape out the seeds. Bring cream, milk, vanilla seeds and the whole pod to the boil.
  • Take the egg-mixture off the heat. Keep whisking and slowly start to pour the cream into the eggs. The ice cream base should be creamy and not too liquid now - be careful again to keep whisking and pour the hot cream in slowly so you don't get scrambled eggs!
  • Pour it into a bowl, put the bowl in the freezer for at least 6 hours. Take the ice cream out of the freezer every 30 minutes and give it a good stir. This is essential, if you don't whisk it well every half hour it won't be creamy! Of course you can use an ice cream machine for this last step.
