Dissolve yeast in water and milk. Add both types of flour and mix briefly. Add the salt and knead the ingredients together to a nice, smooth dough. Let it rest for about 1 hour at room temperature.
Divide the dough into 15 pieces. Shape them into buns, put them on a baking paper and let them rest for another 30 minutes while you preheat the oven with the pizza stone or pizza tray in it to 220 °C.
Bake the spelt buns for 15-20 minutes on the hot pizza stone or baking tray.
Tipps
Freeze them while still warm, this way the buns will remain crispier and tastier.
