Zubereitung
Soak the couscous in boiling water (double the amount of the couscous) for approx. 5 minutes and let it cool down. In the meantime, dice the veggies and fry them in some oil for a few minutes. Season with salt.
Cut the avocado into cubes and the limes into halves. Add the veggies to the couscous and season with sesame oil/oil of your choice, soy sauce, lime juice and chili/spices if you like. Roughly chop the herbs.
Serve the couscous salad with avocado and herbs.
Tipps
Try it with other grains such as bulgur or quinoa as well!
