Couscous-Salad with Avocado

Quick & easy mealprep recipe for summer: vegan couscous-salad with veggies and avocado!

  • Bowl
  • Knife
  • Chopping Board
  • Pan

Zutaten
  

  • 400 g couscous
  • 2 carrots
  • 2 zucchini
  • sesame oil/vegetable oil
  • salt
  • 1 avocado
  • 2 limes
  • soy sauce
  • chili powder/sriracha sauce for spice (optional)
  • spices of your choice: garam masala, cumin and/or paprika are delicious!
  • 1 handful herbs of your choice (coriander, parsley...)

Zubereitung
 

  • Soak the couscous in boiling water (double the amount of the couscous) for approx. 5 minutes and let it cool down. In the meantime, dice the veggies and fry them in some oil for a few minutes. Season with salt.
  • Cut the avocado into cubes and the limes into halves. Add the veggies to the couscous and season with sesame oil/oil of your choice, soy sauce, lime juice and chili/spices if you like. Roughly chop the herbs.
  • Serve the couscous salad with avocado and herbs.

Tipps

Try it with other grains such as bulgur or quinoa as well!
