Combine buttermilk, water and yeast. Add flour and knead for approx. 1 minute. Next, add spice mix and salt and continue kneading until you've got a smooth dough. Shape into a ball and let the dough rest for approx. 2 hours at room temperature covered with cling foil or a kitchen towel.
Preheat the oven to 220 °C with a baking tray or pizza stone in it. Shape the bread and let it rest for another 30 minutes while you preheat the oven.
Notch the bread with a very sharp knife or clean razor blade and bake it for approx. 45 minutes. After 30 minutes, reduce the oven temperature to 200 °C.
