Preserved Lemons

Moroccan preserved lemons give a delicious twist even to the most basic recipes. Try them, finely chopped, on veggies, chicken, fish or grains like couscous and bulgur - so on almost everyting!

Utensilien

  • 1 jar with a lid
  • Knife
  • Chopping Board
  • wooden spoon

Zutaten
  

  • 3-4 lemons organic
  • + juice of 3 lemons
  • 100 g sea salt
  • 2-3 tbsp olive oil

Zubereitung
 

  • Rinse the jar under hot water and dry thoroughly. Add some salt to the bottom. Rinse the lemons as well and cut into them crosswise. Stuff them with salt and put them in the jar. The jar should be well filled, without any air/free space in it. Use a wooden spoon to really push the lemons into the jar and together. Then, fill the jar with salt up to the top so that everything is covered in salt.
  • Put the jar in the fridge for 1 week. Shake it a little bit every 2-3 days.
  • After a week, use your wooden spoon to push the lemons even better into the jar. Add lemon juice and olive oil. They should be well covered in salt and olive oil now. Put the jar back in the fridge for at least 4 weeks.
  • To use the preserved lemons, take a piece of them out, rinse under water (otherwise they're too salty) and enjoy finely chopped.

Tipps

You can also add spices to the preserved lemons, such as cumin, bay leaves or chili. But this recipe is the basic version that you can then adapt!
