Cook the rice according to package instructions for approx. 10-15 minutes. Let it cool while you prep the rest of the ingredients.
Peel the mango and slice it. Cut the tomatoes in half, peel the cucumber as well and slice it. Wash and roughly chop the lettuce. Arrange all of the ingredients in bowls or on plates.
Add the smoked salmon and season the bowls with sesame oil, soy sauce, lemon juice and add sesame seeds on top.
