Southtyrolean Apricot Dumplings

Sweet apricot dumplings or "Marillenknödel" are a specialty from Southtyrol. Try it – it's soo good and easy with my grandma's recipe!

  • Sieve
  • Knife
  • Potato ricer
  • Spoon
  • Pan

Zutaten
  

For the apricot dumplings

  • 600 g potatoes
  • 2 egg yolks
  • 3 tbsp cream cheese or Quark
  • 1 pinch salt
  • 4-5 tbsp semolina
  • 8 apricots
  • 1/2 tsp sugar for every apricot

For the buttery bread crumbs:

  • 50 g butter
  • 150 g bread crumbs
  • 50 g sugar
  • 1/2 tsp cinnamon

Zubereitung
 

  • Boil the potatoes until soft, strain and let them cool. Peel and use a potato ricer or other tool to make them into a dough. Add egg yolks, cream cheese, salt and semolina until you've got a smooth dough that can be shaped into balls.
  • Pit the apricots, put 1/2 tsp sugar in each of them and close them up again. Cover in dough and shape into balls. Cook the dumplings in water for approx. 10 minutes until they are cooked but not too soft yet.
  • In the meantime, melt butter in a pan, add bread crumbs, sugar and cinnamon and mix. Carefully take each dumpling out of the water and put it directly into the bread crumbs, fully cover it with the crumbs. Serve with icing sugar.

You can also make this recipe with plums or other fruit!
