Tramezzini with pesto and grilled veggies

Quick, easy and a vegetarian Italian recipe: tramezzini (sandwich) with pesto and grilled vegetables!

Utensilien

  • Knife
  • Chopping Board
  • Baking tray
  • Baking paper
  • Pan

Zutaten
  

  • 1 Zucchini
  • 1 red pepper
  • 1 carrot
  • 4 mushrooms
  • salt
  • pepper
  • olive oil
  • 4 slices toast
  • 2 tbsp pesto

Zubereitung
 

  • Cut all of the veggies into thin slices. Spread them on baking paper, season with salt, pepper and olive oil and bake the veggies in the oven at 200 °C for approx. 15 minutes. You can also fry the veggies in a pan or on the grill.
  • Heat some olive oil in a pan. Roast the bread in it. Spread 1 tbsp pesto on 2 slices of toast, put the veggies on top and close with another slice of toast. Cut into triangles and serve.

Tipps

You can also use whole-wheat bread for this. If you don't have time to make homemade pesto, just use store-bought one.
