Cut all of the veggies into thin slices. Spread them on baking paper, season with salt, pepper and olive oil and bake the veggies in the oven at 200 °C for approx. 15 minutes. You can also fry the veggies in a pan or on the grill.
Heat some olive oil in a pan. Roast the bread in it. Spread 1 tbsp pesto on 2 slices of toast, put the veggies on top and close with another slice of toast. Cut into triangles and serve.
Tipps
You can also use whole-wheat bread for this. If you don't have time to make homemade pesto, just use store-bought one.
