Pickled chanterelles

Easy recipe for pickled chanterelles or other mushrooms. Ready in 15 minutes! Recipe from Southtyrol.

Portionen: 3 glasses (250 ml each)

Utensilien

  • Knife
  • Chopping Board
  • Pot
  • Kitchen towel
  • 3 Glasses 250 ml each

Zutaten
  

  • 1 kg chanterelles
  • 500 ml white wine
  • 500 ml white wine vinegar
  • 1 tsp peppercorns
  • 3 bay leaves
  • 1 tsp juniper berries
  • 1 tsp mustard seeds
  • 2 tsp salt
  • parsley
  • 2 cloves garlic
  • 500 ml olive oil

Zubereitung
 

  • Clean chanterelles. Bring white wine, white wine vinegar, peppercorns, bay leaves, juniper berries, mustard seeds and salt to the boil and add the chanterelles. Boil for 5 minutes.
  • Strain the chanterelles and put them on a kitchen towel to absorb most of the moisture. Put them in clean glasses, add some parsley, roughly chopped garlic and cover with olive oil.

Tipps

You can pickle porcini or mushrooms as well. 
Serve the pickled chanterelles with a fluffy Italian focaccia
