Clean chanterelles. Bring white wine, white wine vinegar, peppercorns, bay leaves, juniper berries, mustard seeds and salt to the boil and add the chanterelles. Boil for 5 minutes.
Strain the chanterelles and put them on a kitchen towel to absorb most of the moisture. Put them in clean glasses, add some parsley, roughly chopped garlic and cover with olive oil.
Tipps
You can pickle porcini or mushrooms as well. Serve the pickled chanterelles with a fluffy Italian focaccia!
