Quick & Easy Tagliatelle with Zucchini and Tomatoes

- 200 g tagliatelle or other pasta
- 1/2 zucchini
- 100 g tomatoes
- olive oil
- salt
- pepper
- pasta spice mix optional
- basil or other herbs
- parmesan cheese
Cook the tagliatelle as written on the instructions on the package in salted water.

Cut the zucchini in thin stripes, cut the tomatoes in half and fry both in olive oil. Add about 1/2 a cup of pasta water and let it simmer for a few minutes. Season with salt, pepper and pasta spice mix.

Serve the tagliatelle with the veggies, some basil, freshly grated parmesan cheese and some more olive oil on top.
