Dice onion and carrot and fry the veggies in some olive oil. Add the lentils and keep stirring for a few minutes.
Pour the tomatoes and the water into the pan, add the bayleaf, salt and pepper. Simmer for 10-15 minutes until the lentils are done.
Season the vegan bolognese with salt and pepper. Serve with pasta, bread or whatever you like.
Tipps
Tipp: If you don't want the dish to be strictly vegan, add some parmesan cheese on top of the pasta. If you love quick & easy dishes that are healthy and delicious, you have to try this thai curry with prawns (or tofu)!
