Vanilla Crescent Cookies – German "Vanillekipferl"
Vanillekipferl are a type of traditional German Christmas Cookie which is suuuper soft and crumbly. It's made without eggs so if you use vegan butter they are totally vegan!

- 250 g all-purpose-flour
- 210 g cold butter
- 100 g ground almonds
- 70 g sugar
- 30 g sugar + vanilla to coat the cookies after baking
Combine flour, (cold) butter, almonds and sugar to a smooth dough. Take approx. 1 tsp. of dough and shape it into a crescent. Put the cookies on baking paper.
Bake at 180 °C for 10-15 minutes - they shouldn't be too dark, but they should have a nice golden color. Combine the rest of the sugar and vanilla.
Coat the vanilla crescent cookies in vanilla sugar while still warm. Be careful, they are really crumbly while still warm!
Use vegan butter instead of classic dairy butter to make vegan vanilla Christmas cookies!
