Tiramisù Cupcakes

Italian Tiramisù Cupcakes: black and white muffin dough, mascarpone frosting dusted with cocoa powder. Pretty and delicious!

Zutaten
  

For the muffins:

  • 180 g butter
  • 100 g sugar
  • 1 pinch salt
  • 3 eggs
  • 100 ml milk
  • 1 splash rum
  • 180 g flour
  • 100 g ground almonds
  • 2 tbsp baking powder
  • 2 tbsp cocoa powder
  • 1 tsp ground coffee

For the frosting:

  • 200 g cream
  • cream stiffener
  • 250 g mascarpone
  • 5 tbsp sugar
  • 1 tsp vanilla extract/sugar
  • cocoa powder

Zubereitung
 

For the muffins:

  • Combine butter, salt and sugar until creamy. Add the eggs, the milk and a splash of rum. Add the dry ingredients except cocoa powder and coffee. Preheat the oven to 170 °C. 
  • Pour half of the batter into a muffin pan. Add cocoa powder and ground coffee to the remaining batter. Pour it on top of the white batter. Bake the muffins for about 20 minutes at 170 °C.

For the frosting:

  • For the frosting, whip the cream until stiff with some cream stiffener. Set it aside. Combine mascarpone, sugar and vanilla. Add more sugar if you like it sweeter. Fold the cream into the mascarpone. Put it in a piping bag and pipe little dots on top of the muffins. Dust with cocoa powder.
