Combine flour, water, oil and salt to a smooth dough. Let the dough rest in a warm place for about 30 minutes. This will really make it soft.
In the meantine, peel and slice the apples. Marinate them with pine nuts, vanilla, sugar, cinnamon and the lemon juice and zest. The lemon zest is a game-changer!
Divide the dough in half. Roll the dough out (has to be super thin), put half of the apples in the middle of the strudel and roll it up. Continue with the second strudel. Transfer to a baking tray. Bake at 180 °C for about 30 minutes.
