Creamy Mascarpone Pasta (Red Lentil Pasta)
Easy & creamy pasta with mascarpone, arugula and parmesan. Red lentil pasta or normal pasta – you choose!

- 200 g pasta red lentil/chickpea pasta or classic pasta
- 4 tbsb mascarpone
- 1 pinch nutmeg freshly grated
- pepper
- salt
- 1 handful arugula and/or herbs (parsley, basil...)
- parmesan cheese freshly grated
Cook the pasta in salted water (follow package instructions).
In a pan, add mascarpone, a pinch of fresh nutmeg, pepper and salt and heat over medium heat. Wash and chop arugula or other herbs.
Strain pasta and immediately put it in the pan. Stir to cover it in sauce. Serve with fresh arugula or herbs, pepper and freshly grated parmesan on top.
