Strawberry Cake Roll - Grandma's Family Recipe
The best Spring dessert: strawberry cake roll with creamy filling and fresh strawberries. Delicous and really easy! This is my boyfriend's grandma's recipe – so glad that I get to share a great family recipe with you.

For the cake:
- 2 eggs
- 2 tbsp warm water
- 50 g sugar
- 40 g flour
- 25 g starch
- 1/2 tsp baking powder
- 1 pinch salt
For the filling:
- 200 g cream cheese
- 200 g cream
- 5 tbsp sugar
- 1/2 lemon organic, zest & juice
- 200 g strawberries
Preheat the oven to 170 °C.
Whisk the eggs with warm water, sugar and a pinch of salt until very light and creamy. Sift flour, starch and baking powder and slowly fold it into the eggs.
Spread the batter on a baking paper and bake for about 8-10 minutes at 170 °C. Be careful, it should still be light and soft when you take it out of the oven so have a look at it after about 5 minutes.
Carefully take the cake off the baking paper, use a damp kitchen towel that is sprinkled with some sugar to roll it up and let it cool down like that.
Whip the cream until stiff. Fold it into the cream cheese, add sugar, freshly grated lemon zest and lemon juice. Wash and halve the strawberries.
Take the roll out of the kitchen towel, add the filling and the strawberries. Carefully roll it up and decorate it with some icing sugar. Enjoy!
