Easy Berry Tartlets with Yogurt-Lime-Filling

Searching for a last minute birthday gift? Or something to make and enjoy just for yourself? Then make these little tartlets! They're delicious, really easy to make and look pretty.

Utensilien

  • Bowl
  • freezer
  • tartlet-moulds (or one big pie-dish)
  • fork
  • whisk or stand mixer
  • small pot

Zutaten
  

For the dough

  • 240 g butter cold
  • 130 g sugar
  • 2 egg yolks
  • 400 g flour
  • 1 pinch salt

For the filling

  • 300 g yogurt
  • 200 g cream
  • 1 lime (zest & juice) organic
  • 2 leaves gelatine
  • 100 g sugar
  • mixed berries as topping

Zubereitung
 

  • Preheat the oven to 210° C.
  • Knead butter, sugar, egg yolks, salt and flour into a smooth dough. Put it in the freezer for about 10 minutes.
  • Grease the tartlet-moulds with some butter and dust with some flour. Fill them with the dough and prick the dough with a fork. Bake the tartlets for about 10-12 minutes at 210°C. 
  • Let the tartlets cool while you start making the filling: Whip the cream until stiff. Combine yogurt, lime zest and juice and sugar. Soak gelatine leaves in cold water. Warm up about 3 tbsp. of the yogurt and dissolve the gelatine in it. Add the yogurt-gelatine-mix to the rest of the yogurt-cream.
  • Fold the cream into the yogurt and pour the filling on top of the tartlets. Put in the fridge for about 4 hours or overnight and decorate with berries.

Tipps

You can also make these mini-tartlets with mango – either as small tartlets or as a big pie!
