Simple, delicious and healthy with a short ingredients list: this chicken with pomegranate and mint has become one of my favorite easy everyday recipes!
Cut the pomegranate into 4 pieces and carefully pull out the seeds over a bowl. Roughly chop the mint leaves.
Cut the chicken breast into fillets and season with salt. Fry in vegetable oil, add the spices and the soy sauce as well as a splash of water and let it simmer for a few minutes until done.
Serve over bulgur, couscous or rice and with the pomegranate and the mint.
Tipps
Try it with mango and coriander instead of pomegranate and mint as well to give the recipe more of an Asian touch!
