Piadina - Italian wrap with ham, mozzarella and zucchini

Zutaten
  

For the dough:

  • 260 ml water
  • 1 tbsp yeast
  • 400 g water
  • 1 tsp salt
  • 1 tsp olive oil

For the filling:

  • 2 zucchini
  • olive oil
  • salt
  • pepper
  • 50 g lettuce/arugula
  • 250 g mozzarella
  • 200 g ham

Zubereitung
 

  • Dissolve yeast in lukewarm water and add flour. Add salt and olive oil and knead to a smooth dough. Let the dough rest for approx. 1 hour at room temperature.
  • Cut the zucchini into slices and fry in olive oil. Season with salt and pepper and set aside. Wash the lettuce, cut the mozzarella into slices.
  • Roll out the piadina dough and bake it in a pan without any fat until it starts to form bubbles on each side (approx. 1-2 minutes per side). Fill with mozzarella, lettuce, ham and zucchini and enjoy!
