Dissolve yeast in lukewarm water and add flour. Add salt and olive oil and knead to a smooth dough. Let the dough rest for approx. 1 hour at room temperature.
Cut the zucchini into slices and fry in olive oil. Season with salt and pepper and set aside. Wash the lettuce, cut the mozzarella into slices.
Roll out the piadina dough and bake it in a pan without any fat until it starts to form bubbles on each side (approx. 1-2 minutes per side). Fill with mozzarella, lettuce, ham and zucchini and enjoy!
