Linzer Cookies

Linzer cookies, just like grandma would make them: with a buttery, spiced almond dough and a sour cranberry-jam-filling. Yum!

Zutaten
  

  • 100 g butter
  • 130 g flour
  • 130 g ground almonds
  • 80 g sugar
  • 2 eggs
  • 1 lemon (zest)
  • 1/2 tsp ground cloves
  • 1/2 tsp cinnamon
  • 1 pinch salt
  • cranberry jam (for the filling)

Zubereitung
 

  • Cut cold butter into pieces and put it in a bowl together with flour, almonds, sugar and eggs. Add grated lemon zest, spices and combine all of the ingredients except cranberry jam to a smooth dough. Let the dough rest for approx. 30 minutes in the fridge.
  • Roll out the dough (0,5 cm thin) and cut out cookies. Cut the centers out of half of the cookies. Put the base-cookies on baking paper, cover them with the remaining tops (with the hole in the middle) and put some jam in the hole.
  • Preheat the oven to 150 °C. Bake the cookies for 10 minutes. If you want to, you can add some more jam after baking – this way the cookies won’t dry out.

Tipps

Use as much cinnamon and cloves as you like – the spices make the cookies special. If you don't like cranberry jam or wanna make classic Southtyrolean sugar cookies with apricot jam, that's fine too!
