Linzer Cookies
Linzer cookies, just like grandma would make them: with a buttery, spiced almond dough and a sour cranberry-jam-filling. Yum!

- 100 g butter
- 130 g flour
- 130 g ground almonds
- 80 g sugar
- 2 eggs
- 1 lemon (zest)
- 1/2 tsp ground cloves
- 1/2 tsp cinnamon
- 1 pinch salt
- cranberry jam (for the filling)
Cut cold butter into pieces and put it in a bowl together with flour, almonds, sugar and eggs. Add grated lemon zest, spices and combine all of the ingredients except cranberry jam to a smooth dough. Let the dough rest for approx. 30 minutes in the fridge.
Roll out the dough (0,5 cm thin) and cut out cookies. Cut the centers out of half of the cookies. Put the base-cookies on baking paper, cover them with the remaining tops (with the hole in the middle) and put some jam in the hole.
Preheat the oven to 150 °C. Bake the cookies for 10 minutes. If you want to, you can add some more jam after baking – this way the cookies won’t dry out.
