Lemon White Chocolate Cookies
Sweet & sour, fruity & indulgent: We love these lemon white chocolate cookies for Christmas (and not only!).

For the dough:
- 500 g flour
- 2 tsp baking powder
- 250 g butter
- 150 g sugar
- 1 tsp vanilla extract
- 2 eggs
For the filling & glaze:
- 125 g ground almonds
- 2 lemons organic
- 50 g icing sugar
- 300 g white chocolate
Combine all of the ingredients for the dough. Let it rest in the fridge for at least 30 minutes. In the meantime, mix almonds, lemon juice (set aside 2 tbsp) and zest to a smooth paste.
Preheat the oven to 170 °C. Roll out half of the dough, spread the lemon paste on top and cover with the second half of the dough. Prick it with a fork and bake it for approx. 20 minutes.
Let the dough cool, then cut into rectangles or triangles. Mix the remaining lemon juice with the icing sugar and glaze the cookies with it. Let the glaze dry, melt the white chocolate and dip the cookies into the chocolate.
