Dice the onion, peel the potatoes and cut them into wedges. Fry onion and potatoes in olive oil.
Pour the water in the pan and add tomato purée, paprika powder, bay leaves, salt and pepper. Cook for approx. 15 minutes on medium heat until the potatoes are done. Season with salt and pepper again and serve.
Tipps
You can add other veggies as well and top the vegan potato goulash with fresh marjoram if you like!
