Pumpkin-Potato-Gnocchi

Italian gnocchi recipe for pumpkin-potato-gnocchi – this is so easy and delicious! A perfect savory recipe for fall.

  • Knife
  • Chopping Board
  • Pot
  • Ricer
  • Pan
  • Skimmer

Zutaten
  

  • 500 g potatoes
  • 300 g pumpkin
  • 100 g flour
  • 2 eggs
  • salt
  • pepper
  • nutmeg
  • 2 tbsp butter
  • sage or thyme
  • parmesan

Zubereitung
 

  • Peel, roughly dice and cook the potatoes and the pumpkin for approx. 15 minutes until soft. Mash and let them cool for a few minutes.
  • Add flour, eggs, salt, pepper and nutmeg and combine to a smooth and not too sticky dough. Form ropes and cut into gnocchi.
  • Boil in salted water for 2-3 minutes. Melt butter with sage or thyme and serve the gnocchi with butter and parmesan.

Tipps

You can use other veggies to make different kinds of gnocchi: beetroot, carrot, spinach... Add whatever you like instead of the pumpkin!
