Creamy zucchini risotto

Utensilien

  • Knife
  • Chopping Board
  • Grater
  • Pan

Zutaten
  

  • 1/2 onion
  • 1 clove garlic
  • olive oil
  • 2 zucchini
  • 400 g risotto rice
  • vegetable stock
  • salt
  • pepper
  • 100 ml cream
  • 1 handful parmesan

Zubereitung
 

  • Chop onion and garlic. Grate the zucchini. Fry onion and garlic in some olive oil, add the zucchini and the risotto rice. Fry for about 1 minute.
  • Add as much vegetable stock to cover the rice. Simmer for 20 minutes, stirring continuously. Keep adding vegetable stock to cover the rice. Season with salt and pepper.
  • Turn off the heat and add cream and parmesan to the risotto. Serve with some more parmesan and olive oil.
