Creamy zucchini risotto

- 1/2 onion
- 1 clove garlic
- olive oil
- 2 zucchini
- 400 g risotto rice
- vegetable stock
- salt
- pepper
- 100 ml cream
- 1 handful parmesan
Chop onion and garlic. Grate the zucchini. Fry onion and garlic in some olive oil, add the zucchini and the risotto rice. Fry for about 1 minute.
Add as much vegetable stock to cover the rice. Simmer for 20 minutes, stirring continuously. Keep adding vegetable stock to cover the rice. Season with salt and pepper.
Turn off the heat and add cream and parmesan to the risotto. Serve with some more parmesan and olive oil.
