Berry Tart with Yogurt-Lime-Filling
Crunchy crust, creamy refreshing filling and fruity berries make the perfect tart for summer – berry tart!

For the crust:
- 100 g flour
- 50 g butter
- 1 egg
- 30 g sugar
- 1 pinch salt
For the filling & topping:
- 200 g cream
- 300 g yogurt plain
- 1 lime organic
- 3 gelatine leaves
- 100 g sugar
- 300 g berries raspberries, blueberries, blackberries...
Preheat the oven to 160 °C. Combine the ingredients for the dough. Put in the fridge for 10 minutes. Roll out the dough and put it in a pie tin. Press it up the sides a little and prick the crust with a fork. Bake for approx. 25 minutes.
Let the crust cool down, meanwhile start making the filling. Whip the cream until stiff. Combine yogurt, lime zest, lime juice and sugar. Soak gelatine leaves in cold water. Warm up about 3 tbsp. of the yogurt and dissolve the gelatine in it. Add the yogurt-gelatine-mix back to the rest of the yogurt-cream.
Fold the cream into the yogurt and pour the filling on top of the crust. Put in the fridge for at least 4 hours or overnight and decorate with berries before serving.
Instead of berries you can also use mango to decorate the tart – tastes awesome!
If you've still got some berries left, you can make a quick and easy mug cake with blueberries.
