Asparagus Pasta with Pistachios
Pasta with green asparagus, pistachio & parmesan is really quick & easy for busy lunch or dinners. Try this Italian one-of-a-kind-recipe!

- 200 g pasta e.g. trofie, spaghetti, penne...
- 5 green asparagus
- 1 tbsp pistachio salted
- olive oil
- pepper
- parmesan
Cook the pasta in salted water following the instructions on the package. Meanwhile, cut off the ends of the asparagus and cut it into pieces. Roughly chop the pistachios.
Fry the asparagus in some olive oil, add some pasta water and cook it for approx. 5 minutes until it's done but still al dente. Season with salt and pepper. Drain the pasta and add it into the pan.
Serve the pasta with some more olive oil, pepper, pistachios and freshly grated parmesan.
