Asparagus Pasta with Pistachios

Pasta with green asparagus, pistachio & parmesan is really quick & easy for busy lunch or dinners. Try this Italian one-of-a-kind-recipe!

  • Pot
  • Knife
  • Chopping Board
  • Pan
  • Sieve
  • Grater

Zutaten
  

  • salt
  • 200 g pasta e.g. trofie, spaghetti, penne...
  • 5 green asparagus
  • 1 tbsp pistachio salted
  • olive oil
  • pepper
  • parmesan

Zubereitung
 

  • Cook the pasta in salted water following the instructions on the package. Meanwhile, cut off the ends of the asparagus and cut it into pieces. Roughly chop the pistachios.
  • Fry the asparagus in some olive oil, add some pasta water and cook it for approx. 5 minutes until it's done but still al dente. Season with salt and pepper. Drain the pasta and add it into the pan.
  • Serve the pasta with some more olive oil, pepper, pistachios and freshly grated parmesan.
