This simple and healthy white asparagus salad is the perfect Spring dish and delicious for Easter. Parmesan, arugula and a fruity orange-dressing make it special.
Peel the asparagus and slice it very thinly. Marinate with orange juice and zest, olive oil, salt, pepper and a little parmesan cheese. Top with arugula and serve it!

You can try this with green asparagus as well – in that case try adding a little prosciutto to it, that's delicious!
