"Spitzbuben" – Sugar Cookies with Jam

Southtyrol's famous "Spitzbuben" are simple sugar cookies filled with jam. One of my favorite kinds of Christmas Cookies ever! Here's my family's easy recipe.

Utensilien

  • Rolling Pin
  • Baking paper
  • Baking tray
  • Pot

Zutaten
  

  • 250 g all-purpose-flour
  • 100 g sugar
  • 1 egg yolk
  • 1 tbsp rum
  • 200 g cold butter
  • 1 pinch salt
  • 1 jar apricot jam or other kind of jam

Zubereitung
 

  • Combine all of the ingredients (except the jam) to a smooth dough. Try to work as quickly as possible, the dough mustn’t get too warm. Let the dough rest in the fridge for at least 30 minutes or overnight.
  • Preheat the oven to 150 °C. Take some of the dough out of the fridge, roll it out and cut out the cookies. Cut the centers out of half of the cookies. Put the base-cookies on baking paper, spread some jam on top and cover them with the remaining tops (with the hole in the middle). Bake the cookies for 8-10 minutes.
  • If you want to, you can add some more jam after baking – this way the cookies won’t dry out.
