Vietnamese Summer Rolls
Fresh, light, healthy dish – these Vietnamese Summer rolls are perfect for summer days and a really easy recipe!

For the summer rolls:
- 50 g rice noodles
- 1 cucumber
- 1 carrot
- 1 red pepper
- 1 avocado
- 100 g prawns or chicken (or leave it out and make them vegan)
- 1 tsp coconut oil
- salt
- 6 rice paper sheets
- fresh cilantro
For the peanut sauce:
- 1 tsp fresh ginger grated
- 1/2 clove of garlic grated
- 50 g peanut butter just plain peanut butter without any other ingredients
- 1 tsp soy sauce
- 1-2 tbsp hot water
For the summer rolls:
Soak the rice noodles in hot water.
Cut the veggies and the avocado into thin stripes. Fry the prawns in the coconut oil. Season with some salt.
Brush the rice paper with some water, fill it with your ingredients and wrap it up.
