Summer is almost gone, also in Italy. There are these last days where you know summer is almost finished, these last days where you really enjoy that you can sit outside, drink a “Hugo” or “Veneziano” and watch the sun go down.
Gazpacho – to me it sounds like the perfect summer evening on holiday in a foreign country or even in our home country. It sounds like a promise for a great meal – a healthy, fresh and light one. And indeed it is (healthy, fresh and light): it is a cold tomato-soup served with ice cubes and basil.

My recipe for the perfect gazpacho (for 3-4 people)

  • 2 cucumbers
  • 5 tomatoes
  • basil (you can use how much you want but I suggest to use more because it gives a great flavour!)
  • a bit of olive oil
  • salt, pepper, chili
  • a bit of vinegar (balsamico would be best)
  • a bit of garlic
  • ice cubes
  1. It is a really easy recipe, all you need is a mixer! Just peel the cucumbers and the garlic, cut the cucumbers into 2 or 3 big pieces and put everything in the mixer – it does most of the work for you. Use much salt and pepper because the tomatoes and the cucumbers need much spices.
  2. Last, pour the soup in a glass or a bowl with ice cubes – it has to be served very cold with a splash of olive oil and a basil leave on top!

This Gazpacho can be served as first course before a barbecue or just as a refreshing meal on hot summerdays. Enjoy!
