   …I did it with these beautiful purple blueberry macarons!

I’ve tried them, I’ve made them, I succeeded, I failed… my story with macarons is a never ending one of love and hatred, success and failure. Because of this, I decided that I finally wanted to change something. I didn’t want them to be a thing of chance or luck anymore, I wanted THE recipe and THE perfect tipps for foolproof macarons. And you know where I got that? At a baking class, of course.

It is already the second baking class that I took at the “100 Grad” baking school in Bruneck, Southtyrol, Italy. I had already made a basic cake design course there that really helped me, so when I saw the “Macarons baking class” on Facebook I immediately knew that I had to participate in it. And I did, on a Saturday afternoon – 4 hours of baking macarons, receiving tipps, asking questions and tasting the self-made macarons, of course. It was great, the confectioner gave us some foolproof recipes and tipps and I finally realized which mistakes I used to make or what I used to make different from her.

img_9073The next day, I wanted to try out the recipe on my own – and it worked! Even at home, without a confectioner’s help or any special treats (besides my great KitchenAid, of course) the macarons were very, very beautiful, just as they should be and tasted great.

And because of that, I’m now going to provide you this foolproof and in general very, very easy recipe if you follow the steps accurately. You can color your macarons the way you want and fill them as you like, I chose a fruity blueberry ganache which is also foolproof and very easy to make (I didn’t want it to be too hard when making them at home for the first time with a new recipe;))

Recipe for about 1 1/2 baking trays of macarons:

Ingredients:

  • 70 g egg whites
  • 90 g sugar
  • 80 g almond flour
  • 80 g icing sugar
  • 200 g white chocolate
  • 10 g butter
  • 10 g honey
  • 150 g fruit pulp

Method:

  1. Sieve the icing sugar and add it to the almond flour.
  2. Start beating the egg whites, but not too long: when the texture is kind of frothy and creamy, add the 90 g sugar. Keep beating until stiff (I made this step in my KitchenAid which was a great help because you’ll have to beat it quite long until really, really stiff).
  3. At this point, you can add some food coloring to the egg whites.
  4. Now fold in the almond-sugar-mixture to the egg whites – don’t be too careful, you really have to “squeeze” out the air of the mixture. The batter should be creamy, but not too liquid – if it is too liquid, you can’t do anything anymore and it’s too late for your macaron-batter to save it. So be careful, take your time and concentrate on this (maybe most important) step.
  5. Now put the batter in a pastry bag and pipe your macarons on a baking sheet (on a baking tray) in rounds. Let them dry for about 30-60 minutes in a dry place (for example near a radiator). Their surface should feel like chewing gum, a bit dried and not wet anymore.
  6. Pre-heat your oven to 120 ° C recirculating air. Bake the macarons for 15-20 minutes (you should be able to carefully lift them from the baking sheet without them being sticky when they are done).
  7. Let them cool before taking them off the baking sheet. Meanwhile, you can make the ganache: Melt the chocolate in a bain-marie, warm up the fruit pulp and pour the fruit pulp into the melted chocolate. Mix until it is a homogenous mixture. Then add honey and butter. Let the ganache cool.
  8. Take your macarons, fill them with your ganache and decorate them the way you like.

It was a long way of trial and error: many tasty but horrible-looking macarons, some that looked more beautiful but the filling wasn’t the right one and so on… But now I’m glad that once they worked out the way I wanted – they looked and tasted exactly as I wanted them to look and taste. I’m glad to have been to this baking class – the 100 Grad baking school will surely see me again!

Sagt Tschüss zu verunglückten Macarons!

Ich habe Macarons wieder und wieder probiert, gemacht, ich habe es geschafft, wieder nicht geschafft… kurzum: Ich habe eine ganz schön bewegte Vergangenheit mit diesen kleinen Diven-Keksen, eine niemals endende Geschichte aus Liebe und Hass, Erfolg und Misserfolg verbindet uns. Und genau dies wollte ich ändern: Ich wollte nicht, dass Macarons nur Glücksspiel sind, ich wollte DAS Rezept und DIE perfekten Tipps für idiotensichere Macarons, die einfach gelingen würden.
Und wo habe ich das wohl nun bekommen? In einem Backkurs, natürlich.img_9072Dieser Kurs zum Thema Macarons ist schon der zweite, denn ich im “100 Grad”- Backatelier in Bruneck, Südtirol, Italien, gemacht habe. Dort habe ich auch schon einen Basic Fondantkurs gemacht, der mir wirklich sehr viel gebracht hat. Deshalb war ich auch sofort begeistert, als ich den Macarons-Kurs entdeckt habe – ich wusste: Da muss ich hin!

An einem Samstagnachmittag war ich schließlich dort, in einer kleinen Gruppe. Es waren 4 Stunden in denen wir Macarons gebacken, Tipps bekommen, Fragen gestellt und natürlich die selbst gebackenen Macarons verkostet haben. Es war wirklich ein super Kurs, eine tolle Erfahrung und sehr lehrreich. Die Konditorin – großes Kompliment auch nochmal an sie für ihre tollen Kurse und ihre schönen Kunstwerke! – gab uns dann ein idiotensicheres Rezept für die perfekten Macarons und im Laufe dieses Nachmittags habe ich auch endlich verstanden, was ich bis jetzt immer falsch oder anders gemacht hatte.

Am nächsten Tag musste ich natürlich das Rezept gleich zu Hause ausprobieren – so ganz ohne Profihilfe oder besondere Geräte (abgesehen von meiner KitchenAid natürlich!). Und es hat wirklich geklappt! Die Macarons waren wirklich sehr, sehr hübsch, beinahe perfekt und sahen wirklich genauso aus, wie ich mir tolle Macarons vorstelle. Sie schmeckten auch lecker fruchtig nach Blaubeere – die Farbe gab natürlich noch einen besonderen Touch.

Und deshalb werde ich dieses tolle Rezept, das auch noch sehr einfach ist, an euch weitergeben: Es ist wirklich einfach, wenn ihr die Schritte gut und detailliert befolgt. Ihr könnt die Macarons natürlich in jeder erdenklichen Art und Weise färben und füllen, ich habe dieses Mal eine fruchtige Blaubeerfüllung und dazu passend eine lila Farbe ausgewählt.

Rezept für ca. 1 1/2 Backbleche Macarons: 

Ihr braucht:

  • 70 g Eiweiß
    90 g Zucker
    80 g Mandelmehl
  • 80 g Puderzucker
  • 200 g weiße Kuvertüre
  • 10 g Butter
  • 10 g Honig
  • 150 g Fruchtmark

So geht’s:

  1. Puderzucker sieben und mit Mandelmehl vermischen.
  2. Eiweiß anschlagen, aber nur bis es leicht aufgeschlagen und schaumig ist. Jetzt den normalen Zucker dazugeben und weiterschlagen, bis das Eiweiß richtig steif ist – bei diesem Schritt war meine KitchenAid mir wirklich eine große Hilfe, den ich weiß nicht, ob ich ohne sie das Eiweiß so steif und perfekt hinbekommen hätte (man muss sehr, sehr lange schlagen…).
  3. Nun könnt ihr die Lebensmittelfarbe in das Eiweiß einrühren.
  4. Dann die Puderzucker-Mandel-Mischung unter das steif geschlagene Eiweiß heben. Dieser Schritt ist einer der wichtigsten. Ihr dürft nicht zu vorsichtig sein, hebt die Mischung wirklich schön unter und drückt auch etwas die Luft aus der Masse raus. Die Masse sollte schön glänzen, aber nicht zu flüssig sein. Wird sie zu flüssig, habt ihr zu lange gerührt und ihr könnt sie nicht mehr retten.  Seid also hier etwas vorsichtig, nehmt euch Zeit für diesen Schritt und konzentriert euch.
  5. Dann könnt ihr den Teig in einen Spritzbeutel geben und von oben herab gerade Kreise auf ein mit Backpapier belegtes Backblech aufspritzen. Lasst die Macarons für 30-60 Minuten an einem trockenen Ort (z.B. neben einem Heizkörper) trocknen, bis sich ihre Oberfläche nicht mehr nass und etwas wie Kaugummi anfühlt.
  6. Ofen auf 120 ° C Umluft (!) vorheizen. Backt die Macarons für 15-20 Minuten (ihr müsst sie vorsichtig mit einem Messer vom Backpapier lösen können, ohne dass sie kleben bleiben – dann sind sie fertig). Unbedingt abkühlen lassen, bevor ihr sie vom Blech nehmt.
  7. In der Zwischenzeit könnt ihr die Blaubeer-Ganache vorbereiten: Schokolade im Wasserbad schmelzen, Fruchtmark (in meinem Fall Blaubeere) aufwärmen und in die Schokolade gießen. Alles verrühren, Honig und Butter dazugeben und ebenfalls abkühlen lassen, bis die Ganache etwas fester wird.
  8. Nehmt eure Macarons vom Blech, füllt sie mit der Ganache und dekoriert sie hübsch oder ordnet sie schön auf einem weihnachtlichen Teller mit Keksen an.

Es war ein langer Weg, der von vielen Misserfolgen und sehr wenigen Erfolgen geprägt war: viele leckere, aber furchtbar aussehende Macarons, einige wenige, die schön waren, aber bei denen mit der Füllung etwas nicht stimmte… Aber nun bin ich richtig froh, dass sie so geworden sind, wie ich sie mir vorgestellt habe. Zum Glück war ich bei diesem Kurs – das 100 Grad Backatelier wird mich sicher bald wiedersehen!
