Gnocchetti Sardi – Pastateig ohne Ei

Pasta selber machen ist viel einfacher und schneller, als man denkt. Egal, ob klassischer Pastateig mit Ei oder veganer Pastateig ohne Ei, ihr könnt sooo viel aus selbstgemachtem Pastateig machen und braucht dafür weder einen ganzen Tag Zeit noch viele spezielle Utensilien! Kennt ihr zum Beispiel Gnocchetti? Die “kleinen Gnocchi” sind eine Pastasorte aus Sardinien, die ein wenig wie klassische Kartoffelgnocchi aussehen und deshalb auch diesen Namen tragen.

Gnocchi können nämlich nicht nur aus Kartoffeln, Kürbis oder Brot, sondern auch aus Pastateig zubereitet werden – in Italien gibt’s all diese Möglichkeiten. Zurück aber zur Pasta.

Für Gnocchetti Sardi braucht ihr nur ein Gnocchi-Brett oder eine andere gerillte Oberfläche, ich habe das ganze auch schon mit einem klassischen Platzset oder einer Gabel gemacht. Mehr Equipment braucht ihr dazu auch nicht! Den Pastateig könnt ihr mit einer Küchenmaschine oder ganz simpel mit den Händen verkneten, kurz ruhen lassen und dann geht’s auch schon los.

Serviert Gnocchi am besten mit frischer Tomatensauce, Olivenöl und Parmesan. Oder ihr bereitet eine tolle Bolognese-Sauce zu, macht frisches Pesto und und und. Durch die Rillen haften alle Pasta-Saucen sehr gut an den Gnocchetti und das Gericht wird super aromatisch.

Übrigens: Man rechnet bei frischer Pasta mit ca. 150-200 g pro Person, ein wenig mehr also, als bei gekaufter Pasta. Das Rezept reicht für 2 Portionen.

Gnocchetti – Gnocchi aus Pastateig

Gnocchetti sardi – typische Nudelsorte aus Sardinien, mit veganem Nudelteig (4 Zutaten). Super einfach und lecker.
Vorbereitungszeit 1 Stunde
Koch- und Backzeit 10 Minuten
Gesamtzeit 1 Stunde 10 Minuten

Utensilien

  • Gnocchibrett/Gabel
  • Messer

Zutaten
  

  • 200 g Hartweizengrieß Semola
  • 100 g Wasser
  • 1 EL Olivenöl
  • 1 TL Salz

Zubereitung
 

  • Alle Zutaten zu einem glatten Teig verkneten, zu einer Kugel formen und bei Raumtemperatur etwa 30 Minuten ruhen lassen.
  • Den Teig auf ca. 1/2 cm Dicke ausrollen, in 1 x 1 cm große Würfel schneiden und jeden Würfel über ein Pasta- oder Gnocchi-Brett rollen. Alternativ funktioniert auch eine andere gerillte Oberfläche.
  • Die Pasta für ca. 8 Minuten in Salzwasser kochen und mit der gewünschten Sauce servieren – dazu passt z.B. klassische Tomatensauce mit frischem Basilikum.

Gnocchetti Sardi – vegan pasta dough

It’s much easier and quicker to make homemade pasta than most people think. Doesn’t matter if it’s classic pasta all’uovo (with eggs), or vegan pasta dough with durum wheat semolina and water only – you can make soo many pasta variations at home and you don’t need a lot of equipment or time to do so. Have you ever heard of gnocchetti? That’s a traditional pasta from Sardinia, which looks a little like classic gnocchi made with potatoes.

Gnocchi cannot only be made from potatoes, pumpkin, other veggies or bread but also with pasta dough – Italy’s possibilities are almost endless! But let’s come back to our pasta recipe.

To make gnocchetti sardi you only need a gnocchi board or a fork. That’s all you need to start making gnocchetti sardi at home. You can knead the pasta dough by hand or by using a kitchen machine, let it rest for a little and then you’re good to go.

Serve gnocchi with fresh tomato sauce, olive oil and parmesan. Or cook a delicious bolognese-sauce, make fresh pesto…You can serve the pasta with almost any sauce you want. The surface of the gnocchi makes sure that all of the goodness in the sauce sticks to the pasta and this makes it very creamy and tasty.

Btw: For fresh pasta, you have to make 150-200 g per person. It’s a little more than I would make for store-bought pasta, so this recipe is perfect for 2 portions.

Kochutensilien

  • Gnocchi board/Fork
  • Knife

Zutaten
  

  • 200 g durum wheat semolina
  • 100 ml water
  • 1 tbsp olive oil
  • 1 tsp salt

instructions
 

  • Combine all of the ingredients to a smooth dough. Let it rest for approx. 30 minutes at room temperature.
  • Roll the dough out until it's 1/2 cm thick. Cut into cubes (1 x 1 cm) and roll the pieces of pasta over the gnocchi board or another grooved surface.
  • Boil in salted water for about 8 minutes. Serve with any sauce you like, but fresh tomato sauce with basil is super delicious with gnocchetti sardi!
