You know how much I love all types of pasta, nearly every pasta sauce or pasta dish. One of our all-time-favorites that we do make quite often at home is this creamy salmon pasta with red pepper. It’s a dish that nearly everybody likes and that does obviously taste even better with homemade pasta. The “farfalle” (butterfly pasta) is from a new book of a southtyrolean author that shows how to make every type of pasta with very easy tools. Stay tuned for more pictures and dishes I’ll try of this book!

Recipe (serves 4)

Ingredients:

  • 400 g pasta (best is short pasta like farfalle, penne…)
  • 150 ml cream
  • 2 teaspoons red pepper
  • 200 g smoked salmon
  • 1/2 onion
  • salt & pepper
  • a splash of olive oil
  • a splash of brandy or cognac (gives a great taste)

Method: 

  1. Boil the pasta according to package instructions in salted water.
  2. Dice the onion, fry it in some olive oil and add the salmon. Then, add cream, red pepper, salt, ground black pepper and a splash of brandy/cognac.
  3. Let it simmer for 2-3 minutes, season and serve with the pasta!

 


Diejenigen von euch, die meinen Blog häufiger lesen oder mich kennen, wissen, wie sehr ich jede Art von Pasta liebe – alle Sorten, beinahe alle Soßen und Pastagerichte gehören zu meinen Lieblingsgerichten. Eines unserer absoluten Lieblings-Pastagerichte zu Hause ist Cremige Pasta mit Lachs und roten Pfefferkörnern. Natürlich schmeckt auch dieses selbstgemachte Gericht noch besser mit selbstgemachten Nudeln. Die “Farfalle” (Schmetterling-Pasta) habe ich frisch gemacht, das Rezept und die Anleitung dafür findet ihr im Buch “Pasta-Werkstatt”. Das Buch ist vom Südtiroler Markus Holzer geschrieben – ich bin total begeistert davon, weil er beinahe jede Pastasorte mit Dingen herstellt, die jeder zu Hause im Werkzeugkasten hat. Ihr könnt auf viele Rezepte und Bilder gespannt sein, die ich mit Pasta aus dem Buch kreieren werde!

Rezept (für 4 Personen)

Ihr braucht:

  • 400 g Pasta (am besten eignen sich kurze Nudelsorten wie Farfalle, Penne…)
  • 150 ml Sahne
  • 2 TL rote Pfefferkörner
  • 200 g Räucherlachs
  • 1/2 Zwiebel
  • Salz & Pfeffer
  • 1 Schuss Olivenöl
  • 1 Schuss Brandy oder Cognac (gibt einen wahnsinnig leckeren Geschmack!)

So geht’s: 

  1. Pasta nach Packungsanleitung in Salzwasser kochen.
  2. Zwiebeln hacken, in Olivenöl anbraten und den Lachs dazugeben. Mit Sahne und einem Schuss Brandy/Cognac aufgießen, abschmecken mit roten Pfefferkörnern, Salz, gemahlenem schwarzen Pfeffer.
  3. Für 2-3 Min. köcheln lassen, nochmals abschmecken und mit der Pasta servieren!
