It’s almost Easter, guys! And we all know how it is: Menus must be planned, moms go to the store 10 times a week and nobody really has time to make a time-consuming dessert… Therefore, I knew that I had to try something really easy, fast but nevertheless delicious before Easter: And I think I found the perfect little dessert for this occasion – sweet little lemon pies!

They are very easy if you use the store-bought puff pastry & vanilla pudding. Fast, delicious, easy – great dessert, I think! And they also look really great because they’re small, yellow and just sooo cute!

Ingredients:

  • 1 package vanilla pudding
  • juice + zest of 1 lemon
  • 3 tablespoons sugar
  • 1 package puff pastry
  • for the decoration: some strawberries & mint leaves

Method:

  1. Prepare the vanilla pudding as described on the package, add some lemon juice+zest and sugar.
  2. Cut out circles of the puff pastry, put them in the muffin tin (if you want, you can decorate the borders of the circles with a fork).
  3. Bake the pastry for about 12 minutes at 190 ° C. Then fill the vanilla pudding in a piping bag and pipe it on the pastry. Decorate with a piece of strawberry and a mint-leaf!
