Mamas Rezept: Vanillekipferl ohne Ei

Es ist soweit, die Plätzchenzeit hat bei mir endlich angefangen! Ich liebe das Plätzchenbacken fast noch mehr als das Essen selbst. Es macht einfach so viel Spaß und bringt mich in richtig weihnachtliche Stimmung. Das Vanillekipferl-Rezept ist von meiner Mama und es ist wirklich das ALLERBESTE Rezept.

Wir haben schon viele verschiedene ausprobiert, aber das (ohne Ei – ihr könnt die Vanillekipferl auch vegan machen, wenn ihr vegane Butter verwendet) ist unser Favorit. Die Vanillekipferl ohne Ei werden super weich, mürbe und richtig lecker. Genau wie diese Butterkekse – auch ein Familienrezept!

Vanilekipferl ohne Ei

Mürbe Vanillekipferl – eine meiner liebsten Plätzchensorten! Mit Mamas Rezept ohne Ei werden die Vanille-Halbmonde besonders weich und mürbe.
Vorbereitungszeit 20 Minuten
Koch- und Backzeit 10 Minuten
Portionen: 60

Utensilien

  • Backpapier
  • Backblech

Zutaten
  

  • 250 g Mehl
  • 210 g kalte Butter oder vegane Butter
  • 100 g gemahlene Mandeln
  • 70 g Zucker
  • 30 g Zucker + Vanillezucker zum Wälzen der Vanillekipferl

Zubereitung
 

  • Mehl, kalte Butter, Mandeln und Zucker zu einem glatten Teig verkneten. Je ungefähr 1 TL des Teiges zu einem Halbmond formen und auf ein mit Backpapier belegtes Backblech legen.
  • Bei 180 °C für 10-15 Minuten backen – die Vanillekipferl sollten nicht zu dunkel werden, aber eine schöne goldene Farbe haben. Restlichen Zucker mit Vanillezucker vermischen.
  • Vanillekipferl noch warm vorsichtig (warm sind sie sehr brüchig und empfindlich) in Vanillezucker wälzen.

Tipps

Tauscht die Butter durch vegane Butter aus – man schmeckt keinen Unterschied und die Vanillekipferl sind dann vegan!

GERMAN VANILLA CHRISTMAS COOKIES

It’s time for Christmas cookies again! I almost love making them more than I love eating them. It’s so much fun and gets me in a real Christmas mood. This is my mum’s recipe and it’s honestly just THE BEST.

We’ve tried other recipes but these eggless (you can even make them vegan by using vegan butter) vanilla crescent cookies, or as we call them “Vanillekipferl”, are so soft, crumbly and delicious. The texture really is awesome!

Vanilla Crescent Cookies – German “Vanillekipferl”

Vanillekipferl are a type of traditional German Christmas Cookie which is suuuper soft and crumbly. It's made without eggs so if you use vegan butter they are totally vegan!

cook time 10 Minuten
Servings: 60

Kochutensilien

  • Baking paper
  • Baking tray

Zutaten
  

  • 250 g all-purpose-flour
  • 210 g cold butter
  • 100 g ground almonds
  • 70 g sugar
  • 30 g sugar + vanilla to coat the cookies after baking

instructions
 

  • Combine flour, (cold) butter, almonds and sugar to a smooth dough. Take approx. 1 tsp. of dough and shape it into a crescent. Put the cookies on baking paper. 
  • Bake at 180 °C for 10-15 minutes – they shouldn't be too dark, but they should have a nice golden color. Combine the rest of the sugar and vanilla.
  • Coat the vanilla crescent cookies in vanilla sugar while still warm. Be careful, they are really crumbly while still warm!
