“Windbeutel”, “Profiteroles” or “cream puffs”: My sister wanted
them so badly – yesterday she talked me into making them, finally. I had promised her to make vanilla cream puffs for her ages ago when she made 2 videos for my blog and as a thank you for all the photos she takes.

But: Choux pastry? Never tried that before, I thought. When it came to piping the batter on the baking tray – as beautifully as possible – I thought I had ruined them: The batter was very hard, it took me ages to pipe it on the baking tray with the piping bag. In the end, it went more than well: They looked and tasted just as I wanted them to look and taste and I can say that everybody – including me, that’s not always the case – loved them!

I will definitely make them again – maybe for a birthday, as a present from the kitchen or just for a rainy Sunday afternoon. Cream puffs are also very variable, you can fill them with a classic vanilla cream or a chocolate cream, or even with a savory filling such as avocado, cream cheese or salmon.

Recipe (for about 20 cream puffs):

Ingredients:

  • 240 ml water
  • 60 g butter
  • a pinch of salt
  • 200 g flour
  • 5 eggs
  • 1 package vanilla pudding (or, if you live in a German speaking country, “Paradiescrème”)
  • about 100 ml cream

Method:

  1. Pour water in a pot, add butter and a pinch of salt and bring it to the boil.
  2. Then, add the flour and stir until a film forms on the bottom of the pot (it should take about 2-3 minutes).
  3. Put the dough in a bowl and add the 5 eggs. Add one egg after the other – in this way you can look at the consistency of the batter and decide whether to add another egg or maybe leave the batter as it is with 3 or 4 eggs. At the end, the batter should be shiny and you should be able to pipe it through a piping bag (even though it is normal if it is kind of a hard batter).
  4. Put the batter in a pastry bag, pipe small rounds with a peak on a baking tray with a baking sheet on it.
  5. Preheat oven to 200 ° C, bake for about 25 minutes (until golden).
  6. Let the cream puffs cool, then cut them horizontally.
  7. Prepare the filling (vanilla pudding or “Paradiescrème”) as described on the package. Whip cream until stiff, fold into the vanilla filling.
  8. Pipe the filling into the cream puffs.

 


 

“Windbeutel”, “Profiteroles” oder “Brandteigkrapfen”: Meine Schwester wünschte sie sich schon sooo lange – gestern hat sie mich schließlich, an einem gewittrigen Nachmittag, dazu überredet, die Windbeutel endlich zu machen. Ich hatte sie ihr schon lange versprochen, weil sie mir 2 Videos gefilmt und bearbeitet hatte und immer fast alle meine Fotos für meinen Blog macht. Als Dankeschön wünschte sie sich also klassische Windbeutel, mit Vanillecrème gefüllt.

Brandteig? Nie probiert – da fing’s schon an. Als es zum Aufspritzen des Teigs kam, war ich schon am Verzweifeln: Ich habe Ewigkeiten dafür gebraucht und die Windbeutel sahen auch nicht gerade perfekt aus, denn der Teig war sehr hart und dickflüssig, weshalb das Aufspritzen Kraft und Nerven kostete. Ich dachte schon, die Windbeutel wären ruiniert, doch am Ende sahen sie super aus und schmeckten wirklich gut. Und wenn ich – die Perfektionistin in Person – das einmal sage! Sie sahen wirklich super aus und schmeckten allen sehr gut – top gelungen

Ich werde jetzt sicher öfters Windbeutel machen – egal ob für einen Geburtstag, als Mitbringsel oder einfach an einem verregneten Sonntag, sie sehen super aus und schmecken einfach! Noch dazu könnt ihr sie beliebig füllen – egal ob herzhaft mit Frischkäse, Avocadocrème oder Lachs oder süß mit Schokocrème, Früchten oder Sahne.

Rezept (für ca. 20 Windbeutel):

Ihr braucht:

  • 240 ml Wasser
  • 60 g Butter
  • eine Prise Salz
  • 200 g Mehl
  • 5 Eier
  • 1 Packung Vanillepudding oder Paradiescrème
  • ca. 100 ml Sahne

So geht’s:

  1. Wasser und Butter zusammen mit der Prise Salz in einen Topf geben und aufkochen lassen.
  2. Dann das Mehl hineingeben und rühren, bis ein Teigklumpen entsteht. Diesen dann “abbrennen” bis sich eine weiße Schicht am Topfboden bildet (das sollte ca. 2-3 Minuten dauernd). 
  3. Den Teig in eine Schüssel geben und die Eier einrühren – eines nach dem anderen, denn es kann sein, dass ihr nur 4 Eier braucht, wenn euer Teig schon geschmeidig genug ist. Der Teig sollte am Ende schön glänzen und eine dickliche Konsistenz haben, ihr müsst ihn aber trotzdem durch den Spritzbeutel drücken können. Wundert euch jedoch nicht, wenn das eine schwere und mühevolle Arbeit ist – der Teig ist einfach sehr fest.
  4. Teig in einen Spritzbeutel mit Sterntülle füllen und kleine Häufchen aufspritzen.
  5. Ofen auf 200 ° C vorheizen und die Windbeutel für etwa 25 Minuten backen – bis sie goldbraun sind.
  6. Windbeutel abkühlen lassen, dann durchschneiden.
  7. Die Crème nach Packungsanleitung zubereiten, Sahne steif schlagen und unterheben. In einen Spritzbeutel geben und die Windbeutel damit füllen.
